Some of the most common questions that we get asked are common to all meats, be it beef, pork, lamb or venison. By way of introduction, we try and answer them on this page.
How much do I need?
To size your piece of meat, allow approximately 8oz (225g) of uncooked meat per person if it is off the bone. If you are buying meat on the bone allow approximately 12oz (340g) of uncooked weight, but always allow a bit extra if you are feeding a hungry hoard or would like a little left over for the next day!

What should I do to make the most of my meat?
When we prepare the meat for your order we handle it as little as possible to ensure that it is not damaged. It is cut to the specific weight and specification that you have asked for and then vacuum packed to ensure that it reaches you in perfect condition.
When our meat reaches you, it will arrive fresh so that you can use it immediately or you can put it into your deep freeze. Whatever your choice, before cooking your meat, you should take it out of its bag and place it on a plate uncovered and leave it in the fridge for a couple of hours.
About 30 minutes before cooking, remove the meat from the fridge to take the chill off it. This will allow it to be at its optimum condition for cooking.
